Chicken and Dumpling Soup (Gluten Free)
I've been working on recipes that are safe for me to eat. That includes no mammal and low histamine. This soup was eaten for dinner and some went in the fridge for leftovers but my leftovers were portioned into mason jars and frozen. It helps to keep the histamines lower and I will have a couple ready made, safe meals.
Chicken Dumpling Soup
8 cups of chicken broth
1 c diced celery
1 c diced carrots
1 c diced potatoes
2 c chicken(can be leftover or fresh)
1 tbl chicken bouillon (season to taste)
Dumplings
1 c milk
1 egg
1/2 tsp salt
Lump of shortening (around the size of a small egg)
2 c gluten free flour
Mix the milk, egg, salt and shortening together. It should have very small lumps. Add 2 cups flour and mix with a fork. It will be thick and sticky.
Bring the soup to a boil. Once boiling add the dumplings by the teaspoon full. Try not to blob them together. Simmer for 20-30 minutes. Dumplings will be fluffy but chewy and tender.
